Steps
1
Preheat the oven to 200°C. If you have a grill function for the top, use it.

I recommend using a fresh pineapple for this recipe. Alternatively, you can also use canned pineapple slices. If you use canned pineapple, drain well and dry with a kitchen towel.
If you use a fresh pineapple, cut two finger-thick slices and remove the skin and core in the middle.

3
Pour a good shot of rum into a glass and set it aside.
Rum (between 54 -70% alcohol) (1 Cups)
4
To cook the toast, you can use a nonstick pan, cast iron pan, or plancha. Melt 2 tablespoons of butter.
Butter (4 Tablespoons)
5
Once the butter has melted, toast the two slices of toast on one side. Fry until the bottom of the toast is nicely browned.
Then place each slice on a plate.

Add the remaining butter to the pan or plancha, then immediately add two pineapple slices and fry them on both sides. Continue this process while the butter is still melted in the pan.

Once the pineapple slices have absorbed the butter and are well seared on both sides, deglaze the slices with a splash of rum.
If you like, you can ignite the rum with a lighter (flambé). Be sure to use a stick lighter! As soon as you see fire, you must put the lighter away immediately. It's also important to stretch your head as far away from the pan as possible. The ignition will cause high, jet-like flames to rise upwards in a flash.
Swirl (don't flip!) the pan around the pineapple while it flambés. Don't panic, the flames will eventually die down once the alcohol has been used up.

Place a slice of cheddar cheese on each piece of toast (on top of the pineapple slice). If you like it thick, you can also add two slices of cheddar cheese per piece.

Place the two slices of toast on a baking sheet lined with parchment paper or cast iron, and place them on the top rack of the oven, as high as possible without touching the oven's heat bars.
